McCarthy’s is one of the most celebrated and respected butchers in Ireland.  Jack and Tim are a father and son team.  The family butchers shop has been supplying Kanturk with top quality meat since 1892.  With innovative products like their award winning Sliabh Luachra air-dried beef and their mouth watering Spiced Bacon this is a butcher who stands apart in their field.

McCarthy’s began selling venison farmed at the stunningly beautiful Millstreet Country Park in 2009 and sell a full range of venison products in the extensive online shop.

The Bridgestone Irish Food Guide 2010 says,

“McCarthy’s look like a normal butcher’s shop in a normal Irish town.  It’s no such thing. Cherrywood smoked beef. Duhallow lamb sausage. A member of the Brotherhood of the Black Pudding. Tim is the 5th generation of the family to have taken up the butcher’s apron so McCarthy’s allies contemporary nous and know how with more than a century of family tradition. "Boars Head" Kanturk Black Pudding

La Confrérie des Chevaliers du Goûte Boudin, or the Brotherhood of the Knights of the Blackpudding awarded a gold medal and certificate in this major international competition.

We called this "Boars Head" pudding in honour of Kanturk which means the head of the Boar in gaelic. This is a traditional pudding which will make your breakfast complete or a meal in itself.

Cooking instructions: Ideally leave in vacuum bag through-out the cooking process. Submerse in a pot of cold water and slowly bring to the boil and then turn the temperature down so that the water barely trembles. Allow approx 30 mins per 500g.
